Diane wants to know...
What do you miss most about Arkansas? I miss family, and I miss azaleas and daffodils (just not the pollen!) in the springtime. And southern fried everything. I miss everything being green and lush. I miss swimming pools and brick houses--way too much siding and stucco here. I also miss friendly people. Folks here are nice enough, I guess, but Southern folks are THE BEST!
You didn’t ask what I don’t miss, but I’ll tell you anyway. I don’t miss humidity or mosquitos.
What foods, etc. can't you find in CO that you enjoyed here in AR?
Easy. Fried catfish and hushpuppies. And good bar-b-que. Believe me, we’ve tried to find it here and it just isn’t happenin’. Diane, you make me insanely jealous, and HUNGRY, when you mention going out to eat catfish on your blog!
yomj asks...
What do you love most about snow? I love watching it fall, I love playing in it, and I love how beautiful it makes everything look. But most of all, I love it when it snows enough for school to be canceled and I get to spend the day at home (preferably in my pjs) with my family!
What food have you come to love as an adult?
Goat cheese…on pizza, salad, crackers, bread, or pasta. SO, SO yummy! And garlic. And cilantro. Super yum!

OH, an environment without humidity and mosquitos would be wonderful!
I love this idea, Meredith. I may have to do this, too.
Oh - I couldn't live without catfish!!!! :-)
I knew about the catfish but it didn't occur to me that you couldn't find good barbecue.
How about making your own? I do some pretty good smoked chicken and Boston butts if I do say so myself.
I wouldn't miss mosquitoes or humidity, either. Now I'm jealous! ;o)
Love and hugs,
Diane
Mer,
This post made me laugh. I strongly dislike both Goat cheese and cilantro! =)
hi. i live in arkansas and i thought the foods you miss were so funny because we are going out to eat tonight and our choices have been narrowed down to bbq or catfish. now which do we choose?
I just found your blog through In the Midst of It and I am so glad I did. I lived in AR my entire life until a year ago when we moved to Oklahoma. My heart, my soul, longs to live in Colorado. Sadly, my husband hates the cold and says we'll never live there. I'll settle with Northwest Arkansas. It really is wonderful!
I love goat cheese, or any cheese for that matter on everything, too. I love hummus, especially garlic hummus. Delightful.
I'm not terribly into bbq--probably a character flaw on my part--but I do like fried fish, and hushpuppies. I don't know that I've had catfish, but I love other fried fish, so I'm sure I'd be game. Of course you have to have some yummy coleslaw to bring it all together. And roasted sweet corn on the cob. Mmmm
With the exception of Florida, I've never been to the SE USA, so I'll be anxious to see part of it this spring break. We're going to Hilton Head, Charleston, and Savannah with my in-laws. I'm excited about the location, anyway. ;)
I stumbled upon cilantro as an adult, too.
I think I'm addicted.
Glad you enjoy snow. You are gonna have alot. I love goat's cheese also. I love any food that is prepared well, and the server is excited about showing you how to "really" eat it.

O the catfish and hushpuppies!! You had to go and mention that didn't you?! When I'm really craving it bad we go to Cracker Barrel but it's just not the same!
Now my mouth is watering!
Diane is right. Boston butt BBQ is super easy to do in the crock pot. Here's my recipe:

which appropriately enough I made for us last 4th of July, your favorite holiday!
First time visitor...very enjoyable! I'll be back... :)
You just can't beat that southern fried food. But, Mer, just think about it, your arteries won't clog nearly as fast now! : )
Much love,
Julie
The first time I saw fried catfish on a restaurant menu here in Colorado, I ordered it. Never again. It was awful. They just don't know how to fry catfish in this state.
But everything else about where we live is wonderful, right?
I did not try goat cheese until a couple of years ago. I love it!
Hi Meredith! Okay, I've lived here all my life, so maybe this won't be a good suggestion, but... there's a restaurant in Littleton (if you're ever up that way) that you might love if you're missing your southern food. It's called NoNo's Cafe. You might love it! They serve catfish and all sorts of southern food I'm not familiar with. The owners are straight from Louisiana, so it seems like they know what they're doing. :) Maybe it's worth a shot some night when you're homesick for the food you love! (I think it's delish, but being that I've never actually BEEN down south, I have no idea if it compares...)
Once a friend of mine in Idaho asked me, "What is a grit?"
Literally.
