I am hosting Bunco next week, and I am having a hard time coming up with a menu. For some reason, I am totally uninspired these days.
We usually have appetizers and dessert. Anyone have any good recipe suggestions...especially for appetizers? I prefer not to have to serve stuff hot because we break mid-way thru to eat.
I'm open to anything and everything, so if you have a favorite recipe you want to share, please pass it my way. I would be most grateful!

olive tapenade with crusty french bread...
parmesan artichoke dip (from Costco)that you can just heat in 30 seconds, with crackers...
tortillas spread with cream cheese and salsa, the rolled and sliced into bite-sized pieces
apples and caramel dip
choc. covered strawberries (or white chocolate for you freakies out there who don't partake of the brown goodness)--I think they sell the dip in packages right in the produce section (even in micro containers). Or, you could do bark in the microwave.
mini quiches (which can be served at room temp), again from Costco.
As you can see, I'm not a huge proponent of lengthy work in the kitchen. Quick and easy, and almost homemade do it for me.

you are never going to believe it, but Gretchen just stole my tortilla idea i was about to send you... so, i second that appetizer!
Fresh Italian bread dipped in pepper- sprinkled olive oil (think Macaroni Grill) is yummy.
Veggie platter with some kind of dip (Ranch if you aren't feeling creative).
Spinach dip and bread bowl.
Pita chips and any kind of dip.
There's nothing to add, everything sounds yummy, but there is a great dip that we make here in Georgia
1 can of black beans, drained
1 can white corn, drained
4-6 Roma Tomatoes diced
2-3 Avocados diced
Optional - Sliced Black olives - 1 can
Bottled Italian dressing to cover
Serve with Tortilla chips or Fritos

I miss playing Bunco. We used to have a group in my old neighborhood, but since I've moved I haven't been able to find one. I hope ya'll have fun.
Have fun tonight with your Bunco friends. Here are two super easy ones that are so good! If you want to just print these off they are on my recipe blog.
Corn Salsa (got this from sis-in-law that you know) You will want to double this it goes fast.
1 can corn; warmed in microwave
10 grape tomatoes; cut in half
1 avocado; chopped
2 green onions, sliced finely
2 Tbsp. lime juice
1/2 tbsp. cilantro; chopped finely
1/2 tsp. salt
1 clove garlic; chopped finely
Put first four ingredients in a bowl - set aside. Mix together next four ingredients, pour over the vegetables. Let sit in the refrigerator 30 minutes for the flavors to mix together. Serve with tortilla chips.
If you like blue cheese this is addictive.
½ to 1 pound Roquefort Blue Cheese
Fig preserves/jam in a jar
Toasted chopped Walnuts
Slice block of cheese in half. Place both haves in dish. Pour over whole jar of spread. Top with toasted walnuts .
Serve with Italian or french baguette slices (toasted). I sometimes can find in the bakery at the grocery store already toasted slices in a bag.

How about crock pot meatballs? Easy peasy and less to do from you.
I've tried to get a Bunco group going here and only had 3 to respond. Well 4, but one girl is moving this summer. Bummer.
Probably too late but do you have a recipe for Veggie Bars? They are delicious and a huge hit when I make them.
