Three Things on Thursday

1. I went to the eye doctor yesterday. It had been NINE years since my last eye exam and my prescription reading glasses weren't working for me any longer. Neither were the non-prescription readers that I bought at Walgreens earlier this year. I expected to hear that my prescription had changed drastically because I've had a lot of eye fatigue lately and have found myself holding things at arm's length just to read them, but I was not expecting to hear the doctor say: You need bifocals. Sarah was in the exam room with me and she immediately started laughing. My first response was NOT laughter. I'm pretty sure I said a few choice words under my breath. As if the gray hair and the wrinkles and the creaky knees and joints weren't enough, now my eyes have decided to join the hey-you're-slowly-falling-apart-party. I found a cute pair of frames and ordered the progressive lenses. They come in next week and I'm excited to be able to see without straining! I'm also mucho thankful for good optical insurance.

2. I completely faked my way through book club tonight. I actually read the book a few years ago and intended to refresh my memory by skimming it before we met. Yeah, that didn't happen. I found myself remembering more and more as our discussion unfolded but I also did a whole lot of nodding and agreeing. It was a fun night (as usual) and I don't think they'll kick me out for not reading the book. Thank goodness we did a LOT more talking and laughing than actual book discussion!

3. This pizza looks delicious, doesn't it? I want to figure out how to make pizza on the grill. Have any of you done that? Do I need a special pan or rack for it? I suppose I could google it but I wondered if any of you had great tips to pass my way.

Pizza on a grill.....get a cheap pizza stone at Walmart...not your pampered chef one, hopefully your grill lid will close, let it heat up....remember the recipe you referenced called for a 450 oven...and slide em on. I station my dh on the grill and I am inside making the pizzas...we usually make smaller ones....lots of them for this way cause it is hard to manage a large pizza over a hot grill. Crust will be crunchy with a slightly grilled flavor. Best way to make personal pizza...pesto for me, cheese for the boys....have fun.

I make regular pizza dough, form it into a small, personal size round (like Lisa, above, said) and place it right on the grill. Let it bake, till it's brown and crusty on the bottom, flip and doctor your pizza anyway you like. Super easy. Clean up? *What* clean up! lol!

This is a fun post, Meredith. So sorry about the bifocals. :( Glad you got cute frames!

We moved into our new house memorial day weekend and our new neighbors invited us over for a cookout! They were making pizzas on the grill. Their grill has a pizza stone that came with it and a special slot to put it in but I like Lisa's comment. Kelly

Fun post. I bet you'll be adorable in your specs. Pics, please! Were you at the zoo with your two girls on Friday?! I saw a little fam at the orangutang exhibit and I thought it might be you. I ALMOST asked but chickened out. The thought of us almost meeting is exciting and yet I hope I didn't pass up an incredible opportunity to say hi in person. Hmmm.....

Let me know if you discover the secret to pizza on the grill. We gave my husband a pizza pan (made for the grill) for his birthday. The nonstick kind with holes. The first time we used it, the pizza burned to black on the bottom long before the cheese melted on the top. He used one of my oven mitts to remove it from the grill and it burned holes in my mitt!
Needless to say, it all went in the trash. Pan, mitt and pizza. :(

I made that Greek salad recipe you shared! It was AWESOME! Huge hit and so easy!

I wonder why I've never tried making one at home and only order them out to eat!

You are my cooking guru! My family and I tend to love your recipes! If only I could be as disciplined about making a meal plan before I go to the grocery store. I've been in a cooling rut the past 10 years of marriage! :)

I feel your pain with the bifocals. I was just about to post about how I have to hold things at arms length to read anymore! I just went to Walmart and bought some cheap-o reading glasses & that's working for now, but I'm sure bifocals are in my future at some point. Oh, the fun of getting old! :)

"cooking" rut = often no meal plan and same thing over and over (pasta and sandwiches, burger, etc)
